The mango is a fruit of tropical evergreen tree and deep roots of the family anacardiaceae. Its origin is Asian and introduced in the canaries about the year 1790 and cultivated commercially in the beginning of 1970. The fruit can be round, oval or obovate depending on the variety.
It has green skin, changing color to yellow, orange, purple, red or the combination of these when mature. Also, in its maturity, its meat is juicy, sweet and fibrous. The mango can be eaten raw as a fruit for dessert or processed for juices, jams, jellies, nectars and preserves.
